Tahini and spinach pasta with toasted pine nuts
1 dl light tahini *
1 handful of fresh basil
1/2 organic lemon, zest + juice
Salt and black pepper
4 servings of pasta of your choice
Pine nuts, roasted
Plant based hard cheese, or any other hard cheese of your choice
Add spinach, tahini, basil, lemon zest and lemon juice to a blender, a food processor or a bowl if you’re using an immersion blender.
Pour water into a pot and add two good pinches of salt. Cook the pasta until al dente. Save 3 dl of the pasta water, drain the rest.
Add half of the pasta water to the mixer, and mix the sauce until you get a creamy texture (it should be the same thickness as a pancake batter). Add salt and pepper after your preference.
Toss together the cooked pasta, the pasta sauce and some of the grated plant based cheese. Add salt and pepper after your preference.
Divide it into four plates. Top it up with pine nuts, grated cheese and basil. Dig in!
